I've been seeing some of these edible mushrooms on a log in Gail's woods. From what I hear they're rather bland. Anyone ever try them?

I found a huge cluster of really fresh Pheasant backs on Saturday. I harvested them to give them a try. I will soon be able to tell you what I think. Not sure how I'm going to prepare them yet.

My buddy was impressed by how fresh these were. He has harvested them in the past and he said by the time he gets them they have already begun to dry and he can usually only salvage the outer 1"-2". I'm hoping these are good because I know where there are hundreds more if I want them

I ended up turning my pheasant backs into cream of mushroom soup. The recipe I chose wasn't quite as good as I hoped for but the mushrooms themselves were fantastic in this soup. I totally underestimated how much I was going to like these mushrooms. They are the type of mushroom that you would use in stuff and not really eat by themselves. However, I had to saute them in butter along with some onions and garlic and I did a little tasting of them before adding the soup stock to it. They were delicious eaten in this fashion. I could also see using them to make a mushroom risotto. The problem with the recipe I chose was that the soup was really runny for a cream type soup. I was hoping for something a little thicker. I could've used cornstarch to thicken it but I didn't have any and I wasn't running to the store just for that.

Thanks for being the guinea pig Matt! I have a couple days off starting tomorrow so I need to go check my patch. They had ranged from fresh to WAY dried up but hopefully some new ones have sprouted.
