I fried up some Florida crappie fillets this evening and they were goooood. I watched a guy online put them in hot sauce then flour and in the frying pan. It was simple but a nice change in the usual method. You could just taste a hint of the hot sauce. I think I may let the fillets sit in the sauce over night the next time I do it.
