So this is one of the guys whose videos I've been watching to learn the saltwater thing. I love his vids because he's doing the things I would be doing if I still lived in the Daytona area. I've got some striper from our Tennessee trip last summer on the smoker right now and I'll report back on how it turns out. SMOKED FISH DIP season the fish with G.O.P.S on one side.. Garlic Onion Pepper Salt For 3 lbs of smoked blue and jack use 1 large yellow onion 2 stalks of celery 1 pack of cream cheese softened dash of lemon juice 2 TBS horseradish 3 TBS worcestershire sauce old bay to taste garlic powder to taste and mayo until you get the desired consistency ENJOY......

First off, I'll say that smoked striped bass is awesome! Gail's daughter doesn't even like fish but this stuff smelt so good that she asked for a bite then come back and got a big piece of filet! Lol The dip is really good too. I added a fresh jalapeno from the garden and am enjoying some right now on Wheat Thins crackers.

Sorry about the shitty photo, the camera on my new phone is terrible! They were selling homemade fish dip at the bait shop where Colt and me were buying live shrimp in Ormond. I wanted to try it but it was $6.99 for about 4 ounces so I passed.

I have some old fillets in the freezer that I need to use up and these dips look like a great way to do just that. How did you smoke your fish and how long did you smoke them for? Do you think bluegill fillets would work for this?

Do you think bluegill fillets would work for this? I used apple chips in the smoker, my striper fillets were pretty thick so I smoked them for a couple hours at around 225. Gill would probably be fine and I doubt it would take long at all to get them done.

I happened to have some Old Bay chips I picked up at Ollies that went good with the dip too!

I ended up making this with an old (I mean really old!) package of frozen bluegill fillets. Turned out really good! This is a really good way to use up some of that fish that has been sitting the freezer for a long time. Thanks for posting this Troy. I will definitely be making this again.
