Mom has been making this sweet relish this summer and it's delicious! Zucchini Relish10 cups unpeeled ground zucchini 4 cups ground onions 2 cups ground peppers(red & green) Mix, sprinkle with 5 tbs salt, let set for 2 hours. Drain, cover with cool water, and drain again. Cook 5 cups sugar, 2.5 cups vinegar, 1 tsp nutmeg, 1 tsp dry mustard, 1.5 tsp mustard seed, 2 tsp turmeric, 2 tsp celery seed, and 2 tbs cornstarch. Add ground vegetables. Simmer 30 minutes. Can hot. Mom adds some jalapenos too.

Yowzers. We have quite a few zukes that my wife is looking to find a use for... This will definitely top my list of suggestions.

That sounds great! When you say ground zucchini, onions, and peppers, are you actually running them through a meat grinder?

I use my food processor and chop until the consistency I want. You can only do a small amount at a time though. You could also use a blender.

Another question...do you just put the lids and bands on and let the jars seal themselves or, do you process them in a pressure canner or water bath canner?
