I call 'em Hoosier Cheesesteaks because they are made from deer and not beef like a typical Philly Cheesesteak. These were fabulous! My whole family really liked them...and they are simple! Take 2 lb of deer steak (sirloin or roasts would work) and thaw out. Put it back into the freezer for a short time to "stiffen" it up. This allows you to be able to cut the meat very thin. Thinly slice a large white onion, a green bell pepper and a red bell pepper. Place these into a hot skillet (preferably cast iron) with the bottom just barely covered with Extra Virgin Olive Oil. Saute until carmelized and the onions start getting a little dark. Finely chop a couple of cloves of fresh garlic and toss these into the onion mixture once it has carmelized. Add some salt and pepper and then move the mixture off to the side of the skillet. Now throw in the sliced deer meat on the open side of the skillet and cook until medium rare, adding salt and pepper. Now mix the meat and veggies together and add about 4oz of cream cheese. Let this cook for a couple of minutes until the cream cheese is melted, stir and tossing frequently. Now divided the entire assembly into however many servings you need and place some sliced provolone cheese on the top of each serving and cook until melted. Serving onto a deli style sub bun...enjoy! These can also be made the same way by using store bought deli roast beef.
