I got up before the rest of the family Christmas morning and made this. Not bad!
Here's the recipe from my Lodge cook book Camp Dutch Oven Cooking 101....
2 pounds sausage
2 pounds frozen hash browns
8 eggs, beaten with 1/4 cup water
2 cups cheese, grated
In a 12" dutch oven over a full bed of coals, fry and crumble sausage. Remove cooked sausage and drain on paper towels. Using the sausage drippings in the pan, brown potatoes, and spread them evenly in the bottom of camp oven. Place cooked sausage over potatoes. Pour eggs over sausage layer. Sprinkle top with cheese. Cook with 8 coals underneath and 16 on top for 20 to 25 minutes, until eggs are cooked.
Here's how I made it....
2 pounds sausage
1 pound bacon
8 eggs, beaten
26oz bag of frozen shredded hash browns
1 lb shredded sharp cheddar
2 cans biscuits
Cut bacon slab across about every 1" and fry in dutch oven. In another skillet, start browning 1 pound sausage. Remove cooked bacon to paper towels and fry hash browns in the bacon drippings. Spread cooked potatoes evenly over bottom of dutch oven and place cooked sausage over them. Start browning the other pound of sausage in skillet. When the sausage is almost done, pour eggs over the cooked sausage in the dutch oven, place bacon on top of the eggs, then the cheese on top of the bacon, then 1 can of biscuits over the cheese. Place other can of biscuits on baking pan and put all in a preheated 350 oven and cook until done, about 15 minutes for the separate biscuits and about 20-25 minutes for the dutch oven contents. While this is cooking, make sausage gravy with the sausage in the skillet.
It was pretty darn tasty! I think next time I'll leave the biscuits off the top of the dutch oven....they stayed a little doughy on bottom even though they cooked for 25 minutes.
