The whole family loves eating jerky, but I have trouble making it in our gas oven. Mom and Dad solved that problem by getting me an Open Country 700w Food Dehydrator for Christmas! I've only used it once so far, but I was very happy with the results. I dried a batch of jerky in about 6 hours and I could have taken it out earlier than that.(I was frying wings in the garage at the same time. ) It comes with 5 trays and is expandable up to 14 trays. It claims to have a "Converga-Flow Drying System" that requires no rotating of trays, but I did rotate mine halfway through. It's very simple to use; just put the meat on the trays and plug it in. It has 7 different heat settings from 95-160. I figured the trays would be permanently stained after the first use, but they cleaned up good in warm soapy water. I'll keep you posted on how it works and any problems that might arise.

Looks like a nice one Troy. I'm interested to know how it works during future uses. I love jerky and making some at home would be great.
