Since the weather's crappy out, I decided to try something new in the kitchen today. You'll need; 1-2 lbs ground venison(or beef) 1 packet of quesadilla seasoning(our local grocery didn't have it, so I substituted enchillada seasoning) 1 can tomato sauce 1 can diced tomatos with chiles 1 can whole kernel sweet corn 1 can black beans 1/2 onion diced 6 flour tortillas 2 cups shredded cheddar cheese corn chips What to do; Brown meat and onion in a large skillet, drain. Add all the cans and mix, then stir in seasoning packet. Bring to boil, then reduce heat and let simmer for 5 minutes. Coat the bottom of a 13x9 baking dish with no-stick spray. Spread enough of the mixture to cover the bottom, then add 3 tortillas, overlapping as needed. (I cut one in half so I'd have less overlapping.) Layer half the remaing meat mixture and half the cheese. Repeat with the remaing tortillas, meat, and cheese. Spread corn chips over top and sprinkle some more cheese over the chips. Bake in oven @ 350 for 15 minutes(until heated through). Let stand 5 minutes, then serve with fresh lettuce, tomatos, and sour cream. Kim and me loved this, but the kids weren't that thrilled.

That looks very tasty! I was gonna try making something new tonite too but the wife said we had enough leftovers that I didn't need to I've got a pork chop recipe I'm dying to try
