has anyone used any of the summer sausage kits like the ones you get at Gander Mountain, Cabellas.. ect... let me know if they're easy or hard or just your general opinion

Any of the kits I've tried all work pretty well but all the kits I've seen requires you to have a sausage stuffer (which I have). The most important and difficult part is the smoking stage of the summer sausage making process. I've tried it in the oven but honestly I thought the results weren't near as good as a high quality smoke job.

We're gonna take some of our deer burger down to Odon and have some made, the Amish have a meat shop down there. We had some made a few years ago and it was GOOD. You can get it regular, cheese, jalepeno, or cheese/jalepeno. I can't remember the name of it right now, but I'll post some details after we get it made again. I haven't used the kits before, but I tried making some homemade one time and it wasn't so good.

Pohlmans processing down in terre haute does a DANG GOOD JOB on Sausage also. They Brought in a Tray to one of our Banquets, and THAT STUFF DISAPEARED!!! I think I had MAYBE 1 slice(more like a bite). If you wanna take it some where, You cant go wrong with Pohlmans!

I've heard Pohlman's was good, but that they charge an arm and a leg? Jace - you've inspired me to give this a try again. I think I'll get a kit and give it a whirl. Anyone recommend a particular kit? I see that Cabelas has there's on sale right now.

Jace - you've inspired me to give this a try again. Me too My friends all say they think the Hi-Mountain kits are the best. I have not used them but I did sample a log my friend made a couple years ago and it was pretty good. I'm gonna try my own spice conconction and see how it goes. I'll show pics of the progress. Hopefully the results turn out good

I have no experiance with actual summer sausage, But I have used a jerky gun kit with good sucess, the kit I used called for Two pounds of hamburger and the seasonings from the kit, worked great, was easy to do. For refference they were just like a Slim Jim from a gas station but much better.
