Sorry, I've been in Wisconsin Dells for the last five days. I meant to post this early last week but never got to it. This is especially for Kim! Chop up equal piles of good fresh garden tomatoes (preferably plum tomatoes), yellow onions, and fresh cilantro (this is the key ingredient). Chop up at least 1 jalapeno (depending on how hot you want it). Mix all piles together in a bowl. Squeeze juice of half a lime over mixture. Add salt to taste. Notes: If you don't have plum tomatoes, remove core of tomato and squeeze juice and most seeds out before chopping. When I made this for Troy and Kim I used just 1 jalapeno b/c I didn't want scare anybody away from eating it!

Also, if you like guacamole, you can add a few scoops of this to a mashed avacado or two, and have yourself a very delicious guacamole.

I've noticed that with a lot of different foods. Certain food just tastes better the next day. more chance for the flavors to mix i guess.
