Heres another WildOhio magazine recipe: Panfish Chowder 4 slices bacon 1/2 cup chopped onions 1/2 cup diced carrots 1/2 cup chopped celery 1 pound yellow perch (or other fish) cut in 1-inch chunks 1 can cooked potatoes, diced 1 cup water salt and pepper to taste 1 cup milk 1 can creamed corn Cook bacon and reserve two tablespoons of bacon drippings. Place bacon drippings in large pan that has a cover. Add onion, carrot, and celery to pan and cook about 5 minutes, stirring constantly. Stir in fish, potatoes, water, salt, and pepper. Bring to a boil, reduce heat, and simmer covered about 10 minutes. Blend in milk and corn. Stir and, without boiling, warm until heated through. Sprinkle each serving with crumbled bacon. Enjoy!

I made a variation of this tonight and it was GOOD. Ingredients1-1.5 lbs crappie filets cut into 1" or smaller cubes 4-6 slices bacon 6 potatos peeled and diced into small chunks 1 1/2 sticks of butter 1 can cream style corn 1 can cream of mushroom soup 2 cups milk 1/2 onion diced 1 garlic clove minced To makeBoil the potatos until tender. I used a large deep skillet to fry the bacon in so that all the contents could be added, fry bacon until crisp and leave drippings in pan and add 1/2 stick butter. After butter melts add onion, garlic, and crappie. (Before adding the crappie I gave it a good sprinkling of JB's Fish Camp Seasoning, similar to Old Bay.) When fish turns white and flakes add a stick of butter. After butter melts, stir in corn, mushroom soup, potatos, and milk. Let simmer without boiling. Season to taste. Crumble bacon over top to serve. This is one of those meals that warm you from the inside and I'm looking forward to making this again come winter.
