My Mom and Dad got me a smoker for Christmas and I'm trying it out today. I'm smoking the big laker that Chase caught this summer...... I soaked it in a brine overnight; 1/4 cup salt 1/4 cup brown sugar black pepper enough water to cover the filets It's on the smoker now..... I plan on using some of it for a dip tonight; I'll mix cream cheese with sour cream, dice up a green onion in it, then add some of the smoked trout. I can't wait to spread some of that on a cracker!!! I'm gonna smoke it over low heat for about 5 hours, I'll report back later on............

......well, it's done, and WAY sooner than expected. It seems the thermometer on the smoker doesn't work. I thought it wasn't heating up because it's cold outside. When I checked it after a couple hours, the fish was done and the wood chips were on fire! Good thing I checked it. I'm gonna have to get that thermometer replaced. The fish is real good, getting ready to make my dip now.

The dip was real good. If you happened to be watching the blogtv broadcast earlier, you could have watched me make it. I started out with too much cream cheese and sour cream and had to add all the fish to make it. I've noticed that the longer it sets, the more the smoke flavor comes out. It's good!
