Beans..... I just put a pot over the fire. I like to use northerns and pintos with smoked jowl, ham, onion, a little jalapeno, and spices.

Been craving some beans and I might try something like this next time; he adds chicken broth and bouillon, which I bet would add some good flavor.

Stopped by walsuck last night after work and picked up the fixin's. Didn't get anything that I wanted.....how in the world can a store the size of a city be out of great northern beans? Or Eckrich sausage? Anywhooo....grabbed a bag of pinto beans(wanted BOTH pintos and northens), ham pieces(wanted a thick cut bone-in ham steak), Hillshire Farm smoked sausage(wanted Eckrich 4 pepper sausage), sweet onion, and a couple boxes of Jiffy corn muffin mix. Soaked the beans overnight, rinsed, put in the dutch oven and added all the diced meat, half a diced onion, a diced jalapeno, some garlic powder, paprika, black pepper, cayenne, and enough water to cover it all. Put it on the fire and brought to a boil for 5 or 10 minutes, then added Tony Chachere's Creole seasoning, seasoned salt, and let them simmered for 3 or 4 hours. I like mine over a piece of buttered cornbread. It was good! Like I've said before....I never make anything the same way twice.

My mom complains all the time that the Linton Wal Mart doesn't carry a lot of things that they did before they changed it around inside.

My mom complains all the time that the Linton Wal Mart doesn't carry a lot of things that they did before they changed it around inside. It was the one at 46 and I-70 where I stopped, I pass it daily on my commute. When I first started making that drive there was 2 stop lights on that stretch of 46, now(thanks in large part to walsuck), there's 7! Nothing like setting at a red light or 10 at 5am and you're the only car on the road. I'm thinking about straining the leftover beans to make some killer baked beans today, and then saving the ham broth to slow cook some squirrel in.

Strained the broth off the leftover ham and beans from yesterday and added Sweet Baby Ray's Sweet Vidalia Onion Barbecue Sauce for some killer baked beans! Went great with the fried crappie. I think Colton summed it up as he was dipping his third helping...."These beans are sooooooo good!"

Got a pot of beans on the fire with the bone from a "Honeybaked Ham" that I had a gift certificate for from work. Judging by the taste of the ham, this could be my best batch ever.
