Roasted my hen yesterday. It turned out pretty good. The breast was really good. The legs were still pretty tough. After about two hours we thought it was done. The breast was done and we ate that. But once we got to the thigh it definitely needed a little longer. The problem is if we would've done it long enough that the whole bird was done I think the breast would've been overdone and dry. Not bad for a first attempt. Not sure if I will try it again. You can't really beat smoking or grilling the breasts. I just need to find a good way to make the rest of the bird. I did save the heart and fried it in bacon grease and it was reeeaallly good.
