Four fillets of whatever fish you have or prefer, a can of Rotel Original(diced tomato and green chiles) and a cup of rice. Boil the rice. Season fillets with seasoned salt and black pepper. Pour the can of Rotel into a skillet and lay the fillets on top of the Rotel on medium heat. Cook til the fillets are white all the way through. Scoop the Rotel and fillets and place on a bed of rice. I also cut potatoes into wedges, cover with olive oil and sprinkled Cajun Blast and shredded cheese. Place in oven that is preheated to 425 for 35 minutes. Next time I will have to remember to take a picture.

Sounds good! I might try it with some New Orleans Dirty Rice.

I think that dirty rice would be better but all I had was white rice.

Gotta give you 2 thumbs up on this one, Justin. I came home from work a couple nights ago, grabbed my ultralight with a little rooster tail on it, went down to the pond and caught 2 nice gills and a real nice redear in about 10 minutes. Filleted them, threw them in a skillet with a little butter and garlic and the RoTel tomatoes with green chilies to cook as I was preparing a box of dirty rice. When the rice was done I just mixed it in with the skillet contents. It was delicious! Colt didn't want to try it, but after he did he ate 4 helpings! Think next time I'll add a couple more fish to the mix.

4 helpings? Wow. Thats a heavy meal, I usually can only eat two. Glad you guys liked it. Great with a good drink too
