There's a recipe in the August edition of Field & Stream for a sandwich called "The Lake Erie Monster" that's served at Melt Bar & Grill ( meltbarandgrilled.com/) in Cleveland. It's a grilled cheese and beer battered walleye sandwich. I decided to make my own version with beer battered wiper. I had a few pieces of the beer battered wiper leftover from supper last night, so I heated the oven to 375 and placed the fish and 2 pieces of very lightly buttered bread on a foil covered pan. I heated these for about 12 minutes or so, flipping the bread and fish halfway through. In the mean time I made a spicy tartar sauce out of mayo, sweet relish, creole season, and Frank's Red Hot. When there was a couple minutes to go on the heating of the fish and bread, I added 1 slice of American cheese to each slice of bread. When the cheese is melted, remove from oven and make your sandwich, slathering with lots of the tartar sauce. It was GOOD!

Every time I have a fish fry now I try to make a little extra so we can have melted cheese sandwiches later in the week. Today I had one with fried trout. Another little extra I did today was sprinkle some Old Bay seasoning on the buttered toast. Not bad AT ALL!

Tonight I'm gonna make a version I'm calling the "St. Johns River Monster." I'm using Florida crappie dipped in Andy's breading and some of my own spices and tartar sauce made of Mom's homemade pickles, mayo, Old Bay, and Frank's. Trying to make it extra good since Chase and Christina decided they'd rather have Mexican. I'll be sure they get a pic.

I'm calling this one the "Shakamak Monster" sandwich....6 lightly breaded big Shakamak bluegill fillets with pepper jack cheese melted over them, toasted lightly buttered bread with a slice of melted American cheese and tarter sauce with a sprinkling of Old Bay.
